Rice Dishes

While there are many rice dishes that madhwas make, there are very few rice dishes are made during festivals  These rice dishes can be savory as well as being sweet.  There are three main categories.
1.   Flavored rice 
2.  Spicy rice
3.  Sweet rice dishes

Flavored Rice

Flavored rice are simple rice dishes.  They all are made with same ingredients. One main ingredient changes the flavor and style of the rice.  These rice dishes include: 
1.  Lemon Rice
2.  Pulihora (Tamarind Rice)
3.  Mango Rice

Common Ingredients:

Rice - 2 cups

Water - 4 cups

Vegetable Oil/Mazola Oil - 1/4 cup

Mustard Seeds - 1 tbsp

Cumin Seeds - 1 tbsp

Hing - 1/4 tsp

Turmeric - 1 tsp

Green Chillies - 3

Special Ingredients:

Lemons - for Lemon Rice

Tamarind paste/Tamarind Juice - For Tamarind Rice

Green Mango - For Mango Rice

 



Instructions:

1.  In a rice cooker or pressure cooker, add rice and water and cook.

2 Let the rice cool down by keeping the lid open for 10 minutes.

3.  Transfer the rice to a large bowl and separate the rice to ensure there are no lumps using a rice ladle.

In a serving bowl, mix all the ingredients together.  

Serve. 

This dish is served with very small servings.  General ser as few spoons per person.

 



Spicy Rice (Huggi /Pulagam/Khichidi) - Serve with Pacchi Pulusu

This spicy rich dish is called with different names based on where you come from.  This dish is prepared on Sankranti.  Its so delicious and easy to make that its common among Madhwa families to make this dish on non festival days as well.  It can be a complete meal just by adding vegetables like carrots and radishes (mullangi).  Brown Rice is a great alternative for white rice.
Its important that this rich dish be cooked really mushy to get the best flavor.  This dish also requires enough ghee to bring in the right flavor.  Its best prepared with whole black pepper.  However, if your family and specially children do not like to eat whole black peppers, then alternate with green chillies and crushed black pepper.

Common Ingredients:

Rice - 2 cups

Split Green Gram/Masoor Dal/Hesuru Bele - 1 cup

Ghee - 5 tbsp

Cumin Seeds - 1 tbsp

Hing - 1/4 tsp

Turmeric - 1 tsp

Black Pepper Whole - 10 to 15

Water - 9 cups

Salt - to taste

Curry Leaves - 10

 

Optional:

1 inch cut carrots - 2

Cut Radish/Mullangi - 1

 



Instructions:

In a pressure cooker:

Turn the heat on

1.  Add 2 tbsp of ghee

2.  Add curry leaves

2.  Add cumin seeds, hing, turmeric and black pepper (or green chillies)

3.  Add the vegetables (optional)

4.  Add rice -roast for 2 min

5.  Add lentils (split green gram)

6.  Fry for 2 min

7.  Add water and salt

8.  Stir it well

9.  Close the lid

After 3 whistles, turn the flame down.  Let the pressure cooker cool.  Please do not remove the pressure cooker lid while hot.

Once the pressure cooker is cooled down, remove the lid.

1.  Add remaining ghee and mix it well.

2. Serve hot with Pacchi Pulusu.
